Pickle Packaging: How It Works

Pickle Packaging

Although pickle companies use similar packaging, their processes are quite different from one another. Overall, there are three processes involved in pickle packaging. These include refrigeration, natural fermentation and pasteurization.
In refrigeration, the pickles are placed in jars which are filled to the top with brine and spices. These are maintained under continuous refrigeration until they are finally delivered to the consumers. This process helps maintain the crunch that consumers expect from pickles.
In pasteurization, the pickles are completely immersed in brine. However, there is a separate headspace in the package which is sealed with a vacuum button closure. It keeps the indicating button down until the consumer opens the package.
Neutral fermentation is a process in which healthy bacteria convert natural sugar into acids. This happens after cucumbers and brine are added inside the vat.
The pickles are later on packaged in glass jars and sealed with vacuum closures. They stay that way until the process of fermentation is complete.

Quality Control
